The Shun Dual Core Honesuki is a stunning Japanese handcrafted boning knife. Its blade features durable dual core construction with 71 alternating micro-layers of high-carbon, high-chromium VG10 and VG2 stainless steel extending all the way to the edge. This knife easily maneuvers around bones and between joints with absolute control. The handle is a traditional Japanese octagon shape made from ebony pakkawood for a comfortable grip. Includes a wooden saya sheath.
